About NJoy Spirits Distillery
NJoy Spirits began as a family‑operated enterprise focused on building a farm‑to‑bottle distillery in Florida’s Adventure Coast region. The founders chose this rural location to grow key ingredients—rye for whiskey and sugar cane for Mermaid Rum—on the same property where they distill.
Over time, the operation expanded to include a tasting room, tours, and onsite events. Your visit can include learning about their transition from small‑batch production to certified farm distillery status, which underscores their emphasis on local sourcing and onsite agriculture.
Distilling Philosophy
NJoy Spirits emphasizes farm‑sourced ingredients and small‑batch handcrafted production. You’ll see that they grow portions of their own grains and sugar cane, then process and distill those crops into products like Wild Buck Rye, Mermaid Rum, and Ryes‑In‑Shine Moonshine.
Their approach focuses on traceability and local supply chains. That means they combine on‑farm grain with select locally sourced crops, aim to keep production transparent during tours, and present finished spirits that reflect Florida‑specific ingredients and climate.
Njoy’s Premium Spirit Selection
You’ll find aged rye-driven whiskey, a high-proof agricole-style rum, and a botanical gin that reflect the distillery’s farm-to-bottle approach. Each spirit emphasizes specific production choices—grain sourcing, barrel aging, sugar cane varietal—that shape aroma, flavor, and ideal uses.
Wild Buck Whiskey
Wild Buck Whiskey uses grain grown on the distillery’s farm, along with locally sourced grains, to create a robust mash bill. The core expression spends a minimum of six years in oak, which gives you pronounced vanilla, caramel, and toasted oak notes with a stable, dry rye spice on the finish. Single-barrel selections appear periodically at higher proofs and as ten-year-old bottles; these show more concentrated wood influence and the deeper baking-spice character.
Use Wild Buck neat to evaluate its balance, with a splash of water to open the aroma. It also stands up well in stirred cocktails—Old Fashioneds and Manhattans highlight its rye backbone. Expect consistent quality intended for sipping and for classic whiskey cocktails alike.
Now, for those of you who opt to sample the whisky as we did, be prepared for high proof sampling! I’m not a whisky connoisseur or even a big whisky drinker. You don’t need to be to know when you taste it that this is anything but “average” proof.
Mermaid Rum
Mermaid Rum is an agricole-style, 100-proof rum distilled from a portion of a distillery’s farm-raised sugarcane. It spends 3½ years finishing in Wild Buck Rye whiskey barrels, imparting molasses, soft oak, and vanilla, layered over tropical fruit notes like baked pineapple and ripe banana. The aroma often shows butterscotch and banana foster, with a mouthfeel that remains surprisingly smooth at higher proof.
You can enjoy Mermaid Rum neat to explore the barrel-driven complexity or use it in rum-forward cocktails where bold flavor matters—Mai Tais, daiquiris, or barrel-aged tiki mixes. Its high proof lets it hold up in long mixed drinks while contributing distinctive cane and barrel-derived depth.
I liked the mermaid rum, maybe a little too staunch for my sweet tooth, but I preferred it to the whisky.
The NJoy Craft Distillation Process
As you tour NJoy Spirits Distillery, you will learn where it sources raw materials, how it turns those materials into spirits, and how aging and bottling shape the final product. Each step emphasizes local ingredients, hands-on control, and small-batch quality.
You get a clear trace from field to bottle at NJoy Spirits. The distillery grows a portion of its own grains. It supplements them with non-GMO, locally sourced grains from nearby farmers, allowing you to track varietals and harvest time. Producing practices and small-acre plots mean the grain profile—protein, starch, moisture—varies less, yielding more consistent mash bills for whiskey and rum.
When using fruit or cane, the distillery favors fresh, minimally processed inputs to preserve volatile aromatics. You benefit from shorter transit times and fresher fermentables, which directly impact flavor clarity and complexity in the finished spirits.
NJoy Spirits Distillery Experiences
This is where the real fun comes in! As much as this is a working farm and distillery, on the weekends, it transforms into a family-friendly day out with plenty to see and do.
NJoy Spirits Distillery Tasting Room
Step into the tasting room to sample Wild Buck Rye Whiskey and Mermaid Rum. Tastings typically present guided pours so you can compare flavor profiles side-by-side and learn basic tasting notes—nose, palate, finish—without needing prior knowledge.
Note: To participate in the tasting, register at the main bar upon arrival.
Guided Tours
Most weekends, you can participate in a guided tour of NJoy Spirits Distillery. The guided tours cover the distillation process from grain to bottle, and on-site farming practices. The onsite walk through the small production room and see stills, fermentation tanks, and grain storage; guides explain how a portion of the grains comes from NJoy’s own fields and local farmers.
Tours are intimate due to the distillery’s small scale, often allowing close-up views and direct Q&A with distillers.
The Bars
What would a distillery be without a bar? Naturally, there are a couple, and one of them is really unusual. You start at the Bung Hole, the epicenter of the social area next to the small stage where musicians play. There’s a variety of drinks for any palette. It’s here where you’ll sign up for tours or tastings upon arrival.
Area 1 – Helicopter Bar
The bar is built from a law-enforcement helicopter that crash-landed. It was brought to the distillery and repurposed as a bar. Rather than scrapping the aircraft, the fuselage was converted into a tap-and-bar area, allowing bartenders to serve drinks directly from the helicopter’s body.
The helicopter bar reflects the philosophy of the distillery founders, Kevin and Natalie Goff, who designed the property to feel like a quirky “Old Florida” ranch full of unusual attractions and repurposed equipment – and they succeeded!
Few (if any) distilleries in the U.S. feature a full helicopter converted into a working bar, making it one of the property’s signature photo spots.
The Grounds
Let’s say you are not really into whisky or rum tasting, or you don’t drink alcohol. There’s still plenty for you to explore here. The grounds are so unusual: eclectic, artistic, romantic, rustic, and warm. There are several distinct seating areas, a small lake with a fountain, horse pastures, a quaint bridge that crosses a stream, and a working water wheel, fire pits – the list just goes on and on.
This place is a photographer’s dream come true. There are endless photography spots that are already “staged” for that epic shot. It’s the perfect place for the annual Christmas shoot, an engagement shoot, or any other occasion. And, the grounds a mitaculous! You’d be lucky to find a piece of grass out of place.
Even the furniture is a work of art. Rustic iron chairs and benches featuring cushion pillows made from old grain sacks.
Live Music
Almost all weekends, NJoy Spirits Distillery features live music or entertainment.
The Horses
There are beautiful, friendly horses on site. Anyone who loves being outdoors and interacting with animals will enjoy this!
The Heliport
When it’s just not possible to drive, the FAA and FDOT have approved NJoy Spirits Distillery’s heliport for flight! Now make plans to fly straight into Goff Ranch to visit the facility.
